What Happens Before We Unlock the Doors
By the time the first customer walks in, the restaurant already feels alive. Coffee is brewing. The grill is heating up. Someone is checking the salsa. Someone else is asking where the clean towels went, even though they were in the same place yesterday. And at least one person is looking for the spatula they swear somebody moved.
