Eggs and Salsa

A simple breakfast takes more labor than the finished plate lets on. From real potatoes being boiled, peeled, and shredded to experienced cooks timing an entire table at once, here’s a look at what goes into breakfast at Waynedale Cafe.

By the time the first customer walks in, the restaurant already feels alive. Coffee is brewing. The grill is heating up. Someone is checking the salsa. Someone else is asking where the clean towels went, even though they were in the same place yesterday. And at least one person is looking for the spatula they swear somebody moved. That all happens before the doors even open. Customers usually see the finished version. The hot plate. The full coffee cup. The salsa on the table. What they do...

There are some things you only get to experience when you've been part of a community for a long time. One day a little kid is ordering pancakes with a smiley face made out of whipped cream. A few years later they're asking if they can order for themselves. Next thing you know, they're graduating high school. Then they stop in after work. And before you know it... They're walking through the door carrying a baby of their own. Sometimes we don't even recognize them at first. Until they smile....
